Hello,     

Once again we're looking out at the fabulous scenery of snow covered landscape, combined with blue skies and sunshine. It's been a dramatic backdrop for the four Weddings held here during the last month. It was also lovely to welcome more families over the half-term break, along with "romantic" Valentine's couples who were greeted with champagne , strawberries and chocolates, followed by a fabulous Dinner accompanied by our guest Classical Guitarist Connor Rodgers.

We're delighted with the newly refurbished Reception and Entrance, and particularly the Bay View Lounge, which is already proving very popular; ideal for a relaxing drink, coffee, snack or to chill and enjoy the stunning views. There are still a few finishing touches to add, but it's been very satisfying to see the results.

There are still lots of offers through March and April, which appear later in this enews and I hope many of you will return soon.

Scarborough Sea Life Centre

Are asking for donations of old towels to be dropped off at the Sanctuary to use in the care of baby seals at the centre -

Families of seals can often be spotted swimming in Robin Hoods Bay which Raven Hall overlooks and also at Flamborough Head, which is near bridlington, and can be reached via the country road running through Bempton Cliffs which is a natural Bird and Wildlife Reserve

Chef's Recipe of The Month

Chicken Liver Tart

500g Chicken Livers - fresh only

250g Butter

100ml Port

50ml Brandy

1 Onion - finely diced

1 Bay Leaf

Fresh Thyme - small sprig

100g Redcurrant Jelly

Salt and Pepper to season

 

You will need a small food processor for this recipe.

1.             It is important to use fresh Chicken Livers in this recipe as the mix will "split" if using frozen.

2.             Remove any fat and cut out any veins from the Livers and refrigerate.

3.             Melt the butter and allow to cool slightly.

4.             Place all other ingredients in a pan and reduce by ¾.

5.             Place Chicken Livers in food processor and quickly blend, add the reduction and again

                blend until smooth.

6.             Slowly add the melted butter.

7.             Pass the mix through a sieve. Be patient as this can take a while but 7/8 of the mix should

                be retained.

8.             Place the mixture into a pre-baked short crust pastry base (OK from super market,

                but always better homemade).

9.             Bake in a medium oven for around 20 minutes or a bit longer if you prefer well-done.

10.          Refrigerate Tart for for 2 hours minimum before slicing and served with chutney and salad.
